Microgreens are vegetables or herbs that are harvested just after they’ve sprouted and produced their first set of true leaves.

Micro greens tend to be rich in potassium, iron, zinc, magnesium and copper still their nutrient contents vary slightly, most varieties tend to be rich in potassium, iron, zinc, magnesium and copper. Microgreens are also a great source of beneficial plant compounds like antioxidants. 

|| Green gram microgreens dal fry Recipe||
Ingredients
Microgreens – 250grms (2cups)
Moongdal – 1 cup cooked
Tomato – 1 medium size
Onion – 1 medium size
Coconut – 1/2cup
Salt – 1tsp ( as needed)
Green chilli – 2no
Curry leaves – 8-10 leaves
Coriander leaves
Mustard – 1/2tsp
Cumin – 1/2tsp
Chana dal – 1/2tsp
Urad dal – 1/2tsp
Oil – 1tbsp
Chilli powder – 1tbsp
Garlic chives – 1-2tbsp (optional)
Garlic – 8-10nos
Turmeric powder – 1/4tsp

|| Preparation ||
1. Heat oil in pan, add mustard, cumin, urad dal & chana dal saute it.
2. Then add green chilli, curry leaves, onion, garlic & garlic chives saute it till onions get soft.
3. Add turmeric powder, tomato, salt & chilli powder saute until tomato gets soft.
4. Add chopped microgreens and stir it well, close with lid & cook it for 10 minutes in medium flame.
5. Add cooked moog dal & mix it. Taste & check the salt.
6. Add grated coconut, then garnish with coriander leaves.
7. It’s ready to serve hot with chapati/Rice.
