Cooking with Microgreens – Mediterranean Pasta in 15 minutes

Recipe Below:

Pasta of your choice (penne or spiral)
6-8 grape tomatoes
1 garlic clove
1 TBS of white or red onion
1/4 cup of chopped cashews (optional)
1 cup of FoodyBiz microgreens
Feta cheese

Bring your water to a boil and add your pasta. While your pasta is cooking, slice tomatoes, smash and chop garlic, dice onion and chop nuts. Toss in a bowl and add your desired amount of feta cheese on top. When your pasta is ready, strain over sink and rinse with hot water to remove any starch. Pour into bowl and mix.

Use as side or main entree. Enjoy!
