Introducing you crispy SMASHED POTATOES with tender mustard microgreens.???

Potatoes cooked this way are already perfect! But if you add freshly cut mustard microgreens to them, it all gets even better! Zesty mustard notes pair wonderfully with a creamy flesh of baked potatoes.?✨

Ingredients:
? 9-11 medium potatoes
? 30 g unsalted butter, melted
? 1 tbsp olive oil
? salt for sprinkling
? black pepper to your taste
? freshly cut mustard microgreens, an essential garnish!

Method:
1. Potatoes don’t need to be peeled, just wash them thoroughly.
2. Dip in boiling salted water. Cook until tender.
3. Preheat the oven to 200°C.
4. Drain the potatoes and let them dry for several minutes.
5. Place the potatoes on the tray and squish them with a large fork or potato masher. The thinner you make the potatoes, the crispier they are. Leave them thick if you like them fluffier inside. Try them both ways, they are amazing!
6. Drizzle with melted butter and then add some olive oil. This helps the butter not to burn in the oven.
7. Sprinkle it with salt and pepper. Do not add any other spices, they will just burn.
8. Bake for 40-50 minutes until deep golden and crispy. Don’t flip.
9. Sprinkle generously with freshly cut mustard microgreens! Enjoy!
