Peashoot stir-fry Recipe:
2 tbsp. Olive oil
2 tbsp. Tahini
1/2 finely chopped onion (optional: + chopped ginger and chopped garlic)
1/2 tsp Rice Vinegar
1/2 tsp Agave or Honey
– combine to a mixture of your taste
Heat the leftover green peas and beans (or sub with other leftovers) in a pan with Olive oil.
Add 2 big hands full of Peashoot microgreens
Make sure to use enough oil
Stir-fry on high heat for 1-2 minutes
Transfer to a bowl and mix with pre-made dressing
Top it off with raw nut mix (optional)
Enjoy as a side dish, combine with Sweet potato (our favorite) or upgrade to a Nourish bowl.
