This is the Bald Chef’s recipe for an extra healthy salad made with micro greens. Micro greens are 2 week old sprouts of Sunflower and Purple Radish Greens. The Micro Greens were found to have 4 to 40 times the nutritional value of the mature plant. The nutritional value comes from the Vitamin C, E, K, beta-carotene , phytonutrients, and antioxidants. The study was done by the University of Maryland and the USDA in 2012 . The salad recipe produce by these natural organic supper foods was dressed with Extra Virgin Olive oil , Salt, and Black Pepper. The finished product on the salad was outstanding.
