The report “Assessment of Vitamin and Carotenoid Concentrations of Emerging Food Products: Edible Microgreens” lists the nutritional value of a number of microgreens. I have linked to the report in the description.

The report shows levels of Vitamins C, A, K1 and E in 25 different microgreens.

I took the data and put it into a spreadsheet. There are two tabs: one tab compares the microgreens to each other, and the other tab shows the percentage of the Recommended Dietary Allowance for 100 grams of the microgreen.

In the both tabs, the red column shows which microgreens have the most nutrients.

Based on the data, I choose red cabbage and daikon radish as two microgreens to include in my daily microgreen mix.

There are a few shortcomings: Broccoli, kale and sunflower are not included. Sunflower is my favorite microgreen and makes up the majority of my daily microgreen salad. However, I may increase the amount of red cabbage and daikon radish to boost my vitamin intake.
